Cabbage Soup

Ingredients

1/2 cabbage, chopped
1 can diced tomatoes
4-6 cups broth
Soup veggies or soffrito mix equivalent amount to 1 onion, 1 carrot, 2 celery, diced
3 tbsp garlic
Herb mix 1/2 tbsp oregano, basil, thyme, rosemary, etc
1-2 tbsp lemon juice or white vinegar
(Optional): parsley to garnish

Steps

Cook soffritto mix 1 chopped onion, 1 carrot, 2 celery in oil on medium-high, 4-5 min
Add aromatics 3 tbsp garlic, 1/2 tbsp oregano and basil
Add cabbage and sweat ~5 min
Add 1 can tomato and broth 4-6 cups; simmer ~10 min
Add 1-2 tbsp lemon juice or white vinegar
Season salt and pepper
