Instant Pot Lu Rou Fan (Taiwanese Braised Pork)

Ingredients
- 600g pork belly
- 1/2 cup deep fried shallots
- 4 tbsp minced garlic
- 2 tbsp minced ginger
- 2 tbsp oil
- 2 tbsp butter
- 2 tbsp brown sugar
- 2 tbsp soy sauce
- 2 tbsp dark soy sauce
- 1 tbsp shaoxing wine in 1 cup water
- 1 tbsp black vinegar
- 1 tsp five spice powder
- 3-4 star anise
- 2 bay leaves
- 1/2 tsp white pepper
- (Optional): Dry shiitake mushrooms
Steps
- Lightly season pork belly skin with salt
- Saute pork belly in IP until browned
- Add butter to IP saute; stir in brown sugar until caramelized, ~2 min
- Add aromatics and saute ~1 min
- Deglaze with shaoxing wine and water
- Add seasonings , mix, turn off saute
- Cut pork belly into strips; add to IP
- Cook on high 20 min + 10 min natural release
- Remove bay leaves, star anise; simmer to thicken sauce ~10 min
