Lentil Soup (Instant Pot)

Ingredients

300g 1 1/2 cups Castelluccio or Puy (French green) lentils
3 carrots roughly chopped
1 onion roughly diced; can also sub 1 1/2 cup soffrito mix
500g 1/2 lb fingerling or baby potatoes roughly chopped
2 cans chopped tomatoes
4 cups veg or chicken broth
herbs bundle of bay, parsley, rosemary, sage, thyme
2 tbsp salt
2 tsp pepper
(optional) 1/2 tsp Dijon
(optional) 2 tsp aged balsamic

Steps

saute onions or soffrito mix 1 1/2 cup, until soft (5-6 min)
deglaze with broth 4 cups
add lentils 300g, carrots 3, chopped, and potatoes 500g, chopped, herbs, salt 2 tbsp, pepper 2 tsp
pour 2 cans chopped tomatoes, gently avoid IP burn notice by keeping tomato pieces on top
cook at high pressure 10 minutes; natural release
remove herb bouquet, optionally add dijon mustard 1/2 tsp and aged balsamic vinegar 2 tsp
serve!
