Taiwanese Cucumber Salad
Equipment
- Mixing bowl
- Ziploc bag
Ingredients
- 1/4 cup rice vinegar
- 1 tbsp salt + 1 tbsp sugar mix
- 2 tbsp mirin
- 2 tbsp granulated sugar
- 2 tbsp minced garlic
- 2 tsp toasted sesame oil
- 2 tsp chili crisp
- (Optional) 1 tsp sesame seeds
Steps
- Wash and cut cucumbers into round slices; place in mixing bowl
- Mix with 1 tbsp salt and 1 tbsp sugar; let sit in fridge 30 min
- Make marinade
- Drain cukes, pat dry, add to ziploc bag with marinade; wait 4 hours
- Optional: garnish with sesame seeds
