Tortellini Soup

Ingredients

~500g mild italian sausage ground or casing removed
~1 liter chicken stock 1 quart
1 package tortellini ~300g or 10oz
1 can crushed tomatoes ~400g or 15oz
1 cup heavy cream 200ml
1 yellow onion roughly chopped
2 handful leafy greens chopped kale, spinach, etc
3 tbsp chopped garlic
2 tbsp tomato paste 30g
1 tsp salt

Steps

Saute onions, garlic, and sausage until sausage browned, onions translucent. Drain excess fat, season with salt.
Add stock, tomatoes, and tomato paste 1 box stock, 1 can crushed tomatoes, 2 tbsp paste and simmer 15 min.
Stir in greens, tortellini, and cream; simmer 3-5 minutes
