===== Ingredients =====
  * 600g pork belly
  * 1/2 cup ++deep fried shallots|or minced shallots++
  * 4 tbsp minced garlic
  * 2 tbsp minced ++ginger| or a thumb of sliced ginger++
  * 2 tbsp oil
  * 2 tbsp butter
  * 2 tbsp brown sugar 
  * 2 tbsp soy sauce
  * 2 tbsp dark soy sauce
  * 1 tbsp shaoxing wine in 1 cup water
  * 1 tbsp black vinegar
  * 1 tsp five spice powder
  * 3-4 star anise
  * 2 bay leaves
  * 1/2 tsp white pepper
  * (Optional): Dry ++ shiitake mushrooms|soaked in warm water 30+ min and sliced++


===== Steps =====
  - Lightly season pork belly skin with salt
  - Saute pork belly in IP until browned
  - Add ++butter|2 tbsp++ to IP saute; stir in ++brown sugar|2 tbsp++ until caramelized, ~2 min
  - Add ++aromatics| 1/2 cup shallots, 4 tbsp garlic, 2 tbsp ginger++ and saute ~1 min
  - Deglaze with ++shaoxing wine and water|1 tbsp in 1 cup++
  - Add ++seasonings|2 tbsp soy, 2 tbsp dark soy, 1 tbsp black vinegar, 1 tsp five spice, 1/2 tsp white pepper, 3-4 star anise, 2 bay leaves, optional shiitake mushrooms++, mix, turn off saute
  - Cut pork belly into strips; ++add to IP|should be partially submerged++
  - Cook on high 20 min + 10 min natural release
  - Remove bay leaves, star anise; simmer to thicken sauce ~10 min
