===== Ingredients =====
  * ++300g| 1 1/2 cups ++ Castelluccio or Puy (French green) lentils
  * 3 ++ carrots| roughly chopped ++
  * 1 ++ onion| roughly diced; can also sub 1 1/2 cup soffrito mix++
  * ++500g| 1/2 lb++ fingerling or baby ++potatoes| roughly chopped++
  * 2 cans chopped tomatoes
  * 4 cups veg or chicken broth
  * ++herbs | bundle of bay, parsley, rosemary, sage, thyme++
  * 2 tbsp salt
  * 2 tsp pepper
  * (optional) 1/2 tsp Dijon 
  * (optional) 2 tsp aged balsamic


===== Steps =====
  - saute ++onions or soffrito mix| 1 1/2 cup++, until soft (5-6 min)
  - deglaze with ++broth| 4 cups++ 
  - add ++lentils|300g++, ++carrots|3, chopped++, and ++potatoes|500g, chopped++, herbs, ++salt|2 tbsp++, ++pepper|2 tsp++
  - pour 2 cans chopped tomatoes, ++gently|avoid IP burn notice by keeping tomato pieces on top++
  - cook at high pressure 10 minutes; natural release
  - remove herb bouquet, optionally add ++dijon mustard| 1/2 tsp++ and ++ aged balsamic vinegar| 2 tsp++
  - serve!
