  1. Lightly season pork belly skin with salt
  2. Saute pork belly in IP until browned
  3. Add butter to IP saute; stir in brown sugar until caramelized, ~2 min
  4. Add aromatics and saute ~1 min
  5. Deglaze with shaoxing wine and water
  6. Add seasonings , mix, turn off saute
  7. Cut pork belly into strips; add to IP
  8. Cook on high 20 min + 10 min natural release
  9. Remove bay leaves, star anise; simmer to thicken sauce ~10 min
