Ingredients
3 chicken breasts or 6 breast cutlets
50g flour
1 cup
chicken stock
~200ml
1 cup
heavy cream
~200ml
1/3 cup grated parmesan
1/3 cup chopped sun dried tomatoes
2 tbsp olive oil
2 tbsp
butter
~30g
2 tbsp minced garlic
1/2 tsp oregano
1/2 tsp thyme
handful fresh basil, chopped
salt and pepper
lemon wedge
Steps
Season chicken with salt and pepper; dredge in flour
Heat olive oil and butter over medium; brown chicken
4-5 min per side
or until cooked through
; set aside
Saute ~2 tbsp minced garlic, deglaze with 1 cup chicken broth
Add 1 cup heavy cream and 1/2 cup parmesan; simmer 1-2 min
Add dried herbs, salt and pepper, 1/3 cup sun dried tomatoes
Add chicken and simmer another 1-2 min
Garnish with basil; top with squeeze of lemon; serve
