Pickled Vegetables

Mason jars or other pickling container

Ingredients
2-3 thinly sliced
red onions
can use small cucumbers, ginger, carrots; any firm or crunchy veg)
1 cups
vinegar
white vinegar or apple cider vinegar
1 cups water
1/3 cup sugar
1 tbsp sea salt
(Optional) 2 garlic cloves, 1 tsp peppercorns
Steps
Place chopped or sliced onions in container.
Cook
remaining ingredients
1 cup water, 1 cup vinegar, 1/2 cup sugar, 1 tablespoon of salt
in saucepan until solids are dissolved.
Allow liquid to cool; pour over onions
Marinate in fridge at least one hour
