Pickled Vegetables

Equipment

  • Mason jars or other pickling container
  • Pot

Ingredients

  • 2-3 thinly sliced red onions
  • 1 cups vinegar
  • 1 cups water
  • 1/3 cup sugar
  • 1 tbsp sea salt
  • (Optional) 2 garlic cloves, 1 tsp peppercorns

Steps

  1. Place chopped or sliced onions in container.
  2. Cook remaining ingredients in saucepan until solids are dissolved.
  3. Allow liquid to cool; pour over onions
  4. Marinate in fridge at least one hour
