Pickled Vegetables
Equipment
- Mason jars or other pickling container
- Pot
Ingredients
- 2-3 thinly sliced red onions
- 2 cups vinegar
- 2 cups water
- 1/3 cup sugar
- 2 tbsp sea salt
- (Optional) 2 garlic cloves, 1 tsp peppercorns
Steps
- Heat pickling liquid ingredients over medium heat until sugar dissolves, ~1 minute. Let cool.
- Thinly slice or chop pickling vegetables.
- Place cooled liquid and vegetables in mason jars; minimum 1 hour for thinly sliced onions.
