Pickled Vegetables

Equipment

  • Mason jars or other pickling container
  • Pot

Ingredients

  • 2-3 thinly sliced red onions
  • 2 cups vinegar
  • 2 cups water
  • 1/3 cup sugar
  • 2 tbsp sea salt
  • (Optional) 2 garlic cloves, 1 tsp peppercorns

Steps

  1. Heat pickling liquid ingredients over medium heat until sugar dissolves, ~1 minute. Let cool.
  2. Thinly slice or chop pickling vegetables.
  3. Place cooled liquid and vegetables in mason jars; minimum 1 hour for thinly sliced onions.
