Taiwanese Cucumber Salad

Equipment

  • Mixing bowl
  • Ziploc bag

Ingredients

  • 5-6 Persian cucumbers
  • 1/4 cup rice vinegar
  • 1 tbsp salt + 1 tbsp sugar mix
  • 2 tbsp mirin
  • 2 tbsp granulated sugar
  • 2 tbsp minced garlic
  • 2 tsp toasted sesame oil
  • 2 tsp chili crisp
  • (Optional) 1 tsp sesame seeds

Steps

  1. Wash and cut cucumbers into round slices; place in mixing bowl
  2. Mix with 1 tbsp salt and 1 tbsp sugar; let sit in fridge 30 min
  3. Make marinade
  4. Drain cukes, pat dry, add to ziploc bag with marinade; wait 4 hours
  5. Optional: garnish with sesame seeds
